Lime Pickle - Part 1

At the moment I am half way through making my first homemade Lime pickle. It is a minimum of a month long process, first leaving the sliced limes in a salty brine for 2 weeks, before cooking with spices, sugar and vinegar.

After the cooking process the pickle then needs another two weeks for the flavours to mingle and settle before eating. On New Years eve, I will be holding an English style, Indian restaurant dinner party. This lime pickle should be ready, just in time!

Ingredients (for part one)
12 Limes
1 large Tbsp Sea salt
Directions
Chop each lime into between 8 and 12 pieces.

Place into a glass jar with a tight fitting lid.
Add the sea salt, and shake to mix.

Leave in a warm, preferably sunny place and leave for 2 weeks.
Give the jar one or two shakes every day until ready.
